Rahm Fama, having cooked all across America, is now the corporate chef for US Foods. He has a wonderfully inspiring story, which is included in the book. With roots in Spanish fare, he also incorporates Southwestern cuisine, and many vegetables. His book, Meat and Potatoes, includes so much helpful information about choosing high quality meats and then, of course, cooking them. I’ve definitely used the information provided when picking meat from the store.
This is a great recipe book, with great pictures, and good recipes. The recipes I’ve used, the meats have tasted oh so good. The side dishes look easy enough to prepare and I’m sure as quite tasty. Being a huge meat-eating family, I’ve focused on making some of the meat recipes. Hun has certainly enjoyed the meals and I’m glad to have a few new recipes to add to my repertoire.
Maybe because I don’t have the recommended cast iron skillet, maybe because I’m not a chef (more likely the problem), my small kitchen would sometimes get rather smoky while searing the meats. They always came out very very tasty though. Also, remember you can always mix and match the recipes in the book, too!
