Do you ever have plans to do something and only get part of it done?  Or maybe you only take some of the pictures of whatever project you’re doing?  I do both all.the.time.  It’s so hard (or I’m just that forgetful busy) to remember to slow down long enough to snap a quick photo (or few).

Lately I’ve struggled so much with this.  But, today I’m sharing a few food pictures and some recipe links.  Click and try something new!

How about some Sauteed Kale, Peppers, and Mushrooms with Quinoa and a side of Baked Sweet Potato Fries

First lightly saute some sweet peppers and mushrooms. Add in onion if you want, as well. Then add the kale to be sauteed. Once the kale is close to the texture you’d like, add in some broth and cooked quinoa. Stir and heat until warm and combined. Put it on a plate for eating!

As for the baked sweet potato fries. This time, I used some melted coconut oil and a dash of sugar, then baked in a 350 oven for about an hour.

Try this tasty Pollo Guisado

This is a slow cooker meal. Probably not as hearty as if done on the stovetop, but this time I went with the slow cooker. Here’s this recipe links from Caribbean Trading.

Deep Dish Stuffed Crust Pizza

I typically use this recipe to make my crust.  It freezes well.  Sometimes I make some and freeze it, other times I don’t.

For this pizza, I just put a bit of cheese and a butter herb mixture I whipped up, then folded the crust over, added the toppings and baked.
